I would set a warning at 65C, under max load I usually only get up to 60C (rarely ever), yes, setting them at high performance will make it cooler. Since these temperatures are great, how high must the temperature go before I get a warning? (because I can set when I get a warning) I believe that the temperatures will go lower with the high performance or even balanced settings. My fans are set on 'quiet' performance (lowest RPM's).
